4 oz good quality plain chocolate
½ cup butter
4 large eggs
½ teaspoon salt
2 cups sugar
1 teaspoon vanilla extract
1 cup plain flour


Heat the oven to about 170° C
Grease and line a 13 x 9'' baking tray

Melt the chocolate and butter. (I do mine in a pyrex dish using the microwave oven) Leave to cool to room temperature, but don't let it set.

Beat together the eggs and salt until very fluffy, then beat in the sugar and vanilla.

Fold in the cooled chocolate mixture
Fold in the flour.

Pour the batter into the prepared tray and smooth the top.

Bake for 25 - 30 minutes. (Depends on how moist you like the middles!) and allow to cool in the pan completely before cutting.

Variations:-

Add 2 oz chocolate chips
or
2 oz chopped nuts
or
2 oz roughly crushed biscuits
or
a chopped Crunchie

you get the idea! ;) :)
